The Role:

Working as part of the Kitchen Team, this position requires excellent communication and teamwork skills to assist in the management of the pastry section operations, as well as a strong attention to detail and a commitment to maintaining high standards of service and cleanliness.

The Senior Pastry Sous Chef will play a vital role in maintaining the reputation of our desserts and pastry range, contributing to the overall success of our culinary team, and delighting our guests with exceptional desserts and baked goods.

Role Specification:

  • Oversee the preparation and production of all desserts, pastry, petits-flours items, ensuring consistency, quality, and presentation standards are maintained.
  • Assist in the creation and development of food menus, incorporating seasonal ingredients and contemporary trends.
  • Ensure all pastry and dessert items meet established standards of quality and presentation, conducting regular taste tests and inspections.
  • Manage inventory levels, order supplies, and oversee proper storage of ingredients to minimise waste and ensure freshness.
  • Work closely with other kitchen departments to ensure a cohesive and seamless dining experience for guests.
  • Maintain a positive professional atmosphere throughout the kitchen area; lead by example and assisting where help is needed.
  • To help train, supervise and motivate the kitchen team.
  • To carry out any other reasonable duties as requested by the Executive Chef, and Head Chef.

Personal Specification:

Essentials

  • To have a passion for creating bespoke and delectable desserts and pastries.
  • Proficiency in pastry techniques.
  • A keen eye for detail and a passion for creating innovative and visually appealing desserts.
  • Previous experience in a similar role within the hospitality industry.
  • Committed to being part of a driven team that is aiming to achieve quality and high standards in the kitchen.
  • In-depth knowledge of food safety regulations, pastry ingredients, and modern pastry trends
  • Able to work in a fast-paced, high-pressure kitchen environment requiring long hours and the ability to stand for extended periods.

Desirables

  • Experience with large volume covers.
  • Strong interpersonal and communication skills.
  • Food Safety Training.
  • To be keen to share your knowledge and learn new skills.

Shift Patterns:

  • 45 hours per week
  • 5 days out of 7 per week - this includes weekends, holidays, and evenings.
  • Typical shift patterns:
    • 08:00 - 17:30
    • 13:30 - 23:00
  • Note: Full flexibility is key as you will be expected to work as and when necessary to meet the needs of the team and the business
