Are you a creative and experienced pastry chef with a passion for product development and team leadership? We are looking for a dynamic Head of Pastry and Development to join our team and take charge of our patisserie operations. As the business grows and develops it is expected that the person in this position will grow with the company.


In this role, you will be responsible for both the day-to-day management of the patisserie team and the development of innovative pastry products as outlined by our Directors. You will be hands-on in the kitchen, working in collaboration with the patisserie, shop, and office team to deliver this vision to the clients.


Key Responsibilities:


Product Development:

  • Collaborate with Directors to plan and price menus and food items for the year.
  • Ensure adherence to agreed pricing strategies.


Head of Pastry:

  • Oversee the preparation and cooking within the pastry section of the kitchen.
  • Assist in ordering and obtaining supplies for the pastry section.
  • Recruit, train, and develop team members in line with agreed criteria.
  • Set actions and targets, appraise, and manage team performance.
  • Coordinate food preparation and ensure quality management for the pastry kitchen.
  • Investigate and resolve customer complaints within agreed criteria.
  • Allocate workloads effectively among team members.
  • Work in the kitchen with the team to deliver the products to the shop and wholesale clients.


Team Leadership:

  • Support Directors in meeting team and business targets.
  • Facilitate a smooth business operation by ensuring team cohesion and efficiency.
  • Working with HR to recruit, train, and develop team members.
  • Address customer complaints professionally and efficiently with the support of the Shop Manager.
  • Delegate tasks and manage team workloads.


Administration:

  • Maintain high-quality standards and accurate records.
  • Ensure sufficient staffing levels within agreed budgets.
  • Conduct quality control of supplies, food, and kitchen hygiene.
  • Comply with sanitation, hygiene, health, and safety regulations.
  • Manage resources responsibly and control expenses within budgetary limits.
  • Ensure proper use and maintenance of equipment, including adherence to safety protocols.

Qualifications:

  • Proven experience in a senior pastry chef role.
  • Strong background in product development and retail menu planning.

  • Strong problem-solving abilities and attention to detail.
