Our very well known and prestigious client, who are a global leader in location based family entertainment, have an exciting vacancy for a Junior Sous Chef
As a Junior Sous Chef your role will be to create magic moments by assisting the Senior Sous Chefs and Head Chefs in supervising the production and service of food to the agreed standard for guest satisfaction and comfort whilst ensuring maximum profitabilityis achieved in line with the department budget
As a Junior Sous Chef your responsibilities will include:
To ensure good communications between team and head of department
To deputise for the Senior Sous Chef in their absense
To assist the Senior Sous Chef and Head Chef in ensuring that all cleaning programmes are carried out and that each member of the team maintains maximum cleanliness in their workers areas and appearance
To ensure a high standard of food production and presentation at all times, as set out in the performance manual and recipes
To ensure all cleaning materials and equipment within the department are used in conjunction with manufacturers specifications and as laid down in the standards of performance manual
To ensure the security,discipline and opening & closing procedures as laid down by the company standard
Marketing
To be fully conversant with the facilities, services and special promotions offered by the hotel and to pass this information on to guests whenever possible
To be fully conversant with and act upon the companies complaints procedures as outlined in the department manual
Financial
In the absense of the Senior Sous Chef to assist in the monthly stock taking
In conjunction with the Senior Sous Chef, check fridges and stocks on a daily basis and to plan purchasing requirements in accordance with production schedules
To be fully conversant with food gross profit achieved and to assist the Senior Sous Chef in maintaining and improvement of this
Strict control and monitoring of wastage, portions and stock rotation
To ensure that all commodities are ordered, received, checked and stored correctly as laid down by the company standards
Development
To assist in the compilation and costing of menus where necessary
People
Participation of induction and selection of members kitchens
To encourage employee morale and motivate by effective communication with the team, Head of Department and management
To monitor and identify training needs & carry out one to one training where necessary
To ensure that all arrive for duty on time and correct attired in uniforms
Monitor and maintain all training standards & development in conjunction with the Senior Sous Chefs and Head Chef
Maintain high standards of fire, hygiene and safety as laid down by the company and local environmental health
To report and hazards or equipment failures to the Senior Sous Chef
To have full knowledge of and be able to act upon the fire procedures as laid down in the hotel fire manual with compliance to the fire precautions act 1971 and to attend fire training as requested
To be fully conversant and be able to implement the required standards of hygiene & safety and training as outlined in the hotel's company policies and to comply with health and safety training as requested
