Here at Serco we are looking for a Mess/Bistro Supervisor to join the team at our new state of the art Category C prison, HMP Fosse Way.
The main role of the Mess/Bistro Supervisor is to provide and carry out all retail catering services within HMP Fosse Way, in accordance with all relevant and current regulations, legislations and guidelines.
- To assist the Catering & Stores Manager and Head Chef in the delivery of all retail catering services to the establishment.
- To record and document all relevant paperwork to comply with food hygiene regulations, Health & Safety, HACCP, and Company Policies, including monthly stock checks
- To order all foodstuffs and catering consumables required for all retail sites in the establishment.
- To ensure all prices and food offerings remain current and are reviewed monthly.
- To ensure the security and food safety of all foodstuffs is maintained during delivery, storage and distribution within the visit's café area.
- To provide training and supervision to any prisoner worker.
- To train for and carry out any other work acceptable within the capabilities of the post holder.
**What you will need to do the role**
- Literacy and Numeracy Level 2 or equivalent GCSE.
- City & Guilds 706/1 or equivalent NVQ (National Vocational Qualifications) or similar in Food Preparation and Production
- Food Safety level 2
- Hazard Analysis and Critical Control Point (HACCP) Level 2
- Allergen within Catering Level 2
- Good supervisory skills with strong interpersonal skills, including good oral and written communication.
- Assertive, creative and progressive along with good problem-solving skills.
- Good working knowledge of a large catering operation, ideally with a minimum of 3 years’ experience in a similar post preferably within a custodial environment
