We are on the hunt for an exceptional General Manager to lead the team at Restaurant 1925, located within the iconic Caledonian Hotel in Edinburgh. Restaurant 1925 provides a relaxed and elegant setting for Dean Banks' innovative, produce-driven cooking. The menu is a celebration of Scotland's natural larder, showcasing both land and sea. Guests can enjoy both lunch and evening tasting menus, thoughtfully paired with a curated wine list that reflects quality and terroir.

Alongside exceptional dining, 1925 regularly hosts large-scale events—from corporate dinners and private celebrations to intimate weddings. Our events offering is a key part of what we do, and experience in delivering memorable, seamless occasions will be essential for the right candidate.

About the Role

This is a senior leadership position. You'll be the face of the venue—driving standards, developing your team, and delivering results.

Key Responsibilities:

  • Operate the business with ownership, passion, and professionalism
  • Act as the front-facing leader of the restaurant
  • Oversee budgeting, forecasting, and financial performance
  • Manage P&L reporting and ensure commercial targets are met
  • Maintain stock control and manage supplier relationships
  • Drive sales through guest experience, local engagement, and marketing strategy
  • Maintain exceptional standards of service and team development
  • Manage bookings, service logistics, and guest flow
  • Lead and oversee private dining and events, ensuring every occasion—whether corporate, social, or celebratory—meets the highest standards

About You

We're looking for someone with experience, vision, and a commitment to delivering excellence.

You'll bring:

  • Experience in a similar General Manager or senior hospitality role
  • Strong commercial awareness and leadership ability
  • In-depth drinks knowledge (WSET Level 2 or higher preferred)
  • Knowledge of food safety, allergens, and compliance
  • A passion for training, motivating, and developing high-performing teams
  • The ability to lead from the floor, always present and proactive
  • Excellent communication and organisational skills
  • A results-driven mindset with an eye on quality and growth
  • Proven experience in managing events and private hire with a focus on guest experience
