This is an all-day food operation from Wednesday to Sunday.

The style of food would be classified as Bistro/Brasserie style cuisine. The events market will also form part of the business.

The Head Chef with have strong hands on kitchen experience.

The main emphasis is on quality and developing a strong team and kitchen management whilst using the best of local produce.

Key Duties and Responsibilities

· Lead the kitchen operations for the restaurant.

· Lead and develop the culinary staff

· Involvement in and the maintenance of a supplier book

· Manage the purchasing & delivery of food

· Manage the kitchen budget to achieve set targets

· Manage all aspects of the kitchen but primarily operational and quality functions

· Ensuring adequate resources are available according to business needs

· Manage the provision of food to F&B outlets and acting where necessary to ensure compliance with current legislation

· Control costs without compromising standards, improving gross profit margins and other departmental and financial targets

· Ensure team members have an up-to-date knowledge of menu items, special promotions, functions and events

· Maintain good communication and work relationships with the rest of the team in the business.

· Ensure that staffing levels are maintained to cover business demands

· Manage staff performance issues in compliance with company policies and procedures

· Recruit, manage, train and develop the kitchen team with the General Manager

· Comply with security, fire regulations and all health and safety and food safety legislation

· Ensure maintenance, hygiene and hazard issues are dealt with in a timely manner

· Ensure food control systems are adhered to so margins are on target

· Regular review of all menus with the General Manager to confirm offerings are in line with market trends

· Be environmentally aware

· Other duties as required

Prerequisites for this position include

· Previous Head Chef experience required

· Strong on costings, portion control & purchasing

· Fully aufait with HACCP & Food Safety Regulations

· A chef that can bring new ideas, new dishes, new menus

· A chef dedicated to producing wholesome food with great taste and funky presentation

· A problem solver and can think 'outside the box'

· Strives for perfection while executing excellent cuisine
