The Grill and Tavern, launched in March 2023, aim to become two of the most sought-after restaurants in the Cotswolds, following the success of James Martin's sister hotel in Hampshire, Chewton Glen.

Senior Sous Chef Role

The Senior Sous Chef supports the Head Chef in ensuring that all food preparation and dishes meet the company's standards.

  • The Senior Sous Chef takes ownership and responsibility, communicating with the Head Chef during service for timing and progress of all dishes;
  • To show ownership and be responsible for the kitchen operation in the absence of the Head Chef;
  • To ensure that the correct and same ingredients are used as specified by the Head Chef to maintain quality at all times.
  • To be passionate in assisting with the training, induction, and development of the kitchen brigade;
  • To control wastage and help maintain food costs;
  • To be confident in ensuring that in the preparation and presentation of food, the highest standards are maintained at all times;
  • To assist as directed with the operation of various sections within the Kitchen;
  • To work towards and ensure a positive relationship exists between the Restaurant and the Kitchen, focusing on respect and teamwork; and
  • To take ownership and direct responsibility with passion and pride for all dishes served in your section.
Requirements
  • Proven experience as a Senior or Sous Chef
  • Excellent communication and leadership skills
  • Ability to work under pressure and manage a team
  • Strong attention to detail
