Job Description:

The Chinese Cuisine Chef will be responsible for supervising the Chinese production kitchen and supporting the Executive Chefs in our unit. Key responsibilities include:

  • Working closely with the Executive Chef team to ensure consistent quality products in the Chinese kitchen.
  • Day-to-day managing and supporting of the Chinese Kitchen team.
  • Maintaining high quality standards in staff performance, Chinese food production, and presentation service procedures.
  • Ensuring all kitchen appliances are kept clean and well-maintained and reporting any issues to the Head Chef.
  • Planning production to the daily schedule and ensuring exceptional quality is maintained at its highest level with maximum efficiency in accordance with DO & CO regulations.
  • Ensuring operations adhere to all SOP's and relevant Critical Control Points, Health and Safety, Food safety, and all legal requirements.
  • Performing quality control checks to ensure specifications are met on raw materials and finished products.
  • Ensuring the correct cleaning and sanitizing chemicals are used in compliance with EHO standards in the kitchen and taking corrective action as required.

Qualifications:

  • Possession of a passion for cooking authentic Chinese food.
  • Extensive knowledge of Chinese Cuisine.
  • Possession of a passion for food and working with fresh and high-quality ingredients.
  • Ability to work in a fast-paced environment and handle multiple orders simultaneously.
  • Strong attention to detail and ability to maintain consistency in food quality.
  • Excellent knife skills and ability to handle raw fish safely.
  • Knowledge of food safety and sanitation regulations.
  • Strong communication and teamwork skills.
  • Right to work in the UK.
