Job Summary

We're seeking a skilled Sous Chef to join our team at Harlequins FC. As a key member of our kitchen team, you'll be responsible for maintaining consistent food standards and quality across all areas and stages of production and supply.

Key Responsibilities:
  • Monitor and maintain food standards and quality across all areas and stages of production and supply.
  • Ensure HACCP procedures are maintained and complied with.
  • Prepare and cook food to meet guests' needs, minimizing wastage.
  • Ensure food is prepared to required standards, checking taste, presentation, and quality.
  • Work efficiently to keep up with busy periods, ensuring food is served promptly.
  • Ensure all food sent out is correctly garnished and portioned.
  • Advise front-of-house staff on food allergens and correct food temperatures.
  • Work with the head chef to plan menus, cost them effectively, and meet relevant targets.
  • Communicate effectively with front-of-house staff on menu items, content, and special requests.
  • Assist in completing relevant paperwork, production, and wastage sheets, cleaning records, and food hygiene regulations.
