About the Role

We are seeking a highly skilled and experienced Sous Chef to join our culinary team at the Mercure Brands Hatch Hotel & Spa in Kent. As a key member of our kitchen team, you will be responsible for assisting the Head Chef in overseeing daily kitchen operations, ensuring the quality and consistency of dishes, and maintaining a clean and organized workspace.

Key Responsibilities
  • Assist the Head Chef in daily kitchen operations, including food preparation and cooking processes.
  • Oversee food preparation and cooking processes to ensure the quality and consistency of dishes.
  • Maintain a clean and organized kitchen, adhering to high standards of food safety and hygiene.
  • Assist in menu planning and development, working collaboratively with the Head Chef to create new recipes.
  • Manage inventory and order supplies as needed, ensuring efficient use of resources.
  • Train and supervise kitchen staff, providing guidance and support to ensure excellent service.
  • Ensure compliance with food safety and hygiene standards, monitoring kitchen equipment and reporting any maintenance needs.
  • Collaborate with the Head Chef to create new recipes, staying updated on industry trends and culinary techniques.
  • Handle customer feedback and make necessary adjustments to ensure exceptional service.
  • Coordinate with front-of-house staff to ensure smooth service, working collaboratively to deliver an excellent guest experience.
  • Assist in cost control and budget management, ensuring efficient use of resources.
  • Prepare and plate dishes to the highest standards, maintaining a keen eye for detail and quality.
  • Manage kitchen staff schedules and shifts, ensuring adequate coverage and minimizing downtime.
  • Conduct regular kitchen inspections and audits, identifying areas for improvement and implementing changes as needed.
  • Assist in catering and special event planning, working collaboratively with the events team to deliver exceptional service.
Requirements
  • Proven experience as a Sous Chef or similar role, with a strong background in kitchen management.
  • Culinary degree or equivalent experience, with a strong knowledge of cooking techniques and recipes.
  • Excellent leadership and management skills, with the ability to work under pressure in a fast-paced environment.
  • Strong organizational and multitasking abilities, with excellent communication and interpersonal skills.
  • Commitment to maintaining high standards of food safety and hygiene, with a keen eye for detail and quality.
  • Creative and innovative approach to menu planning, with the ability to train and mentor kitchen staff.
  • Strong problem-solving skills, with the ability to work collaboratively with a team.
  • Flexibility to work various shifts, including weekends and holidays, with physical stamina to stand for long periods and lift heavy items.
  • Knowledge of kitchen equipment and maintenance, with the ability to handle customer feedback professionally.
