Job Title: Chef de Partie

Job Summary:

CRC Recruitment Ltd is seeking a skilled and experienced Chef de Partie to join our team. As a key member of our kitchen staff, you will be responsible for assisting the running of the kitchen, contributing to the overall success of the restaurant in accordance with the hotel's standards and financial goals.

Key Responsibilities:

  • Organise and set up the assigned section of the kitchen to increase speed and maximise productivity.
  • Ensure that all dishes from that section are prepared consistently and according to standard recipes.
  • Assist the Sous Chefs and Executive Chef in ensuring that all culinary standards in that section comply with company and hotel policies and standard operating procedures.
  • Monitor food and operating costs and control these by reducing waste.
  • Train the kitchen porters in that section of the kitchen in the skills necessary for them to perform their function.
  • Work in any sections of the kitchen when necessary or as requested by the Senior Sous Chef or Executive Chef.
  • Ensure the sanitation standards for the kitchen are being met.
  • Be familiar with all sections of the kitchen to facilitate the flexible use of colleagues.
  • Ensure that operating and kitchen equipment is maintained to a good standard with minimum breakage.
  • Provide fast, friendly, professional, and responsive customer service to the restaurant service delivery team.
  • Ensure that set ticket times are met and communicate to management if not met.
  • Check stations assigned to and check for complete setups.
  • Stay focused and be conscious about food presentation and consistency.
  • Practice proper food handling procedures.
  • Practice proper knife handling skills.
  • Use and apply proper kitchen safety procedures and basic cooking skills.
  • Properly wrap, label, date, and store all food items in their correct areas.
  • Set up, operate, and clean all kitchen machinery/equipment and store it in its proper place.
  • Maintain complete knowledge of correct maintenance and handling of equipment, using only as intended and only after proper training has been demonstrated.
  • Efficiently work with materials and/or resources, being aware of and minimising costs and expenses.
  • Keep the workstation clean at all times during service time.
  • Perform all duties in adherence to all company standards and policy.
  • Must have the ability to work a flexible schedule and late hours when necessary.
  • To attend all required company meetings and training.

Requirements:

  • Previous experience of working within a similar-sized kitchen is preferable.
  • Excellent organisational skills alongside the ability to work both independently as well as part of a team.
  • The ability to follow instructions while using your own initiative to prioritise tasks in a fast-paced and potentially stressful environment.
