Job Summary

We are seeking a highly skilled and experienced Executive Sous Chef to join our team at Sofitel Al Hamra Beach Resort. As a key member of our culinary team, you will be responsible for assisting in the management of our food and beverage outlets and banquets, ensuring that each outlet is managed successfully as an independent profit center.

Key Responsibilities
  1. Assist in performance appraisals when necessary.
  2. Ensure that each outlet is managed by a Management Team (Chef de Cuisine) who are totally accountable for their profitability.
  3. Set, in close conjunction with each Chef de Cuisine, Annual Operating Targets, which will form part of the Hotel's Annual Business Plan.
  4. Ensure that all the outlets and banquets are managed efficiently according to the established concept statements and adhere to company and hotel policies & procedures and all standards.
  5. Assign responsibilities to subordinates and to check their performance periodically.
  6. Represent the Kitchen Department in absence of the Director of Culinary.
  7. Support Heartists needs in other Divisions based on the hotel priorities and anticipated business levels.
  8. Monitor service and Food & Beverage standards in all outlets and banquets.
  9. Establish, implement and control performance standards for the Stewarding Operation in Kitchens, Restaurants and Bars.
  10. Ensure that all food preparation and presentation and kitchen sanitation practices meet with hotel standards and local legislations.
  11. Assist in the implementation of the various food safety and hygiene standards including HACCP and other Municipality regulations.
  12. Work closely with Hygiene Officer in implementing all hygiene and safety procedures.
