We are seeking a highly skilled and motivated Chef de Partie to join our culinary team at Château de Mercuès.

About the Role

The successful candidate will be responsible for preparing and cooking dishes to the highest standards, ensuring exceptional quality and presentation. They will work closely with the senior chefs to maintain a clean, organized, and safe working environment, adhering to strict food safety and hygiene standards.

Key Responsibilities

  • Prepare and cook dishes according to recipes and guidelines.
  • Execute culinary techniques specific to the assigned section, ensuring quality, taste, and presentation meet established standards.
  • Assist in the setup and organization of the assigned section before service, ensuring all necessary ingredients, equipment, and tools are available and in proper working order.
  • Maintain a clean, tidy, organized, and safe working environment at all times.
  • Monitor and maintain the quality and consistency of dishes throughout the cooking process, reporting any quality or consistency issues to the senior chefs.
  • Assist in the management of ingredient inventory for the assigned section, ensuring proper stock rotation, storage, and labeling.
  • Work closely with the culinary team, effectively communicating and collaborating to ensure smooth operations and timely service.
  • Contribute ideas and suggestions for new dishes, improvements, or adaptations for the assigned section.
  • Adhere to strict food safety and hygiene standards, ensuring cleanliness and sanitation in the assigned section.
  • Develop and complete training courses available, encouraging others to do the same.
  • Take responsibility and ownership of their section, ensuring a high standard of cleanliness and tidiness is maintained.
  • Set examples to less experienced team members.
  • Complete tasks efficiently and assist others as needed.
  • Improve culinary skills and knowledge continuously, staying updated on industry trends, techniques, and new ingredients.
  • Cook confidently and present food to guests well, explaining dishes clearly and professionally.
  • Seek guidance from senior chefs and participate in training programs and workshops.
  • Present a professional appearance at all times, adhering to uniform and personal hygiene standards.

Requirements

  • Culinary qualification or experience in a professional kitchen.
  • Food hygiene qualification is essential.
  • Previous experience in a professional kitchen, preferably in a similar role.
  • Strong culinary skills with knowledge of various cooking techniques and kitchen equipment.
  • Attention to detail and commitment to delivering high-quality dishes.
  • Understanding of food safety and hygiene standards and ability to follow them strictly.
  • Excellent teamwork and communication skills to effectively collaborate with the kitchen team.
  • Flexibility to work evenings, weekends, and holidays, as per the demands of the restaurant.
  • Physical stamina and dexterity to stand for long periods, lift heavy pots and pans, and perform repetitive tasks.
  • Ability to act as a First Aid Aider or Fire Warden in the event of an accident or emergency.
