As a Sous Chef at Mercure Haydock Park Hotel, you will be responsible for contributing to the production of high-quality food items in accordance with instructions from the Head Chef. You will ensure excellent food hygiene practices are observed in the entire food chain from storage through to preparation and service. Additionally, you will be responsible for ensuring HACCP compliance within the kitchen and all Food & Beverage outlets.
Key Responsibilities:
- Manage all aspects of the kitchen, including operational, quality, and administrative functions.
- Assist in the training and development of junior members of the kitchen team.
- Supervise the kitchen and ensure the consistent production of high-quality food through all hotel food outlets.
- Manage customer relations, when necessary, in the absence of the Head Chef/Executive Chef.
- Ensure resources support the business needs through the effective management of working rotations.
- Support brand standards through the training and assessment of the Team.
- Control costs without compromising standards, improving gross profit margins and other departmental and financial targets.
- Assist other departments wherever necessary and maintain good working relationships.
- Comply with hotel security, fire regulations, and all health and safety and food safety legislation.

Mercure Haydock Park Hotel is a 4-star hotel surrounded by beautiful grounds and has 135 bedrooms, including luxurious décor and comfortable Standard, elegant Superior rooms, and Suites. The hotel offers a charming setting for your stay in Haydock, with the traditional Gregorian mansion-style building, the central courtyard, and the surroundings of the beautiful landscape grounds. The hotel features a Bistro-style meal and contemporary European cuisine in the in-site Beerchers restaurant, as well as a Lounge and Conservatory bar for light refreshments and an impressive selection of drinks.
