We are seeking a highly skilled and experienced Head Sommelier to join our dynamic team at Henrietta Street Hotel LTD. As a key member of our wine team, you will be responsible for delivering exceptional wine experiences to our guests, while also providing expert guidance and training to our staff.

Key Responsibilities:
  • Present and explain the wine menu to guests, ensuring a deep understanding of our wine offerings and their pairing possibilities.
  • Create a welcoming environment for guests, assessing their needs and making wine recommendations that exceed their expectations.
  • Advise customers on the best choice of wine to have with their meal, using your extensive knowledge of different wines and their profiles.
  • Recommend food and wine pairings, taking into account guests' personal tastes and food choices.
  • Provide complete and proper wine service, including the use of appropriate glassware and tasting procedures.
  • Ensure that all wine services delivered meet Experimental's high standards and venue procedures.
  • Carry out end-of-service operations, tidying up and preparing for the next service.
  • Apply all food and beverage safety and quality regulations.
Administrative Responsibilities:
  • Maintain an organized and clean wine cellar, ensuring that wines are stored at the correct temperature.
  • Ensure that all wine glasses and equipment are used, stored, cleaned, and handled correctly and safely.
  • Print out wine menus and ensure they are correct and up to date.
  • Carry out regular wine stock-takes and order wines based on pars and analysis of sales.
  • Manage suppliers' relationships and administrative responsibilities, including data base management, contact details, and communication with the purchasing/accounting department.
  • Ensure that wine references are always up to date in Micros.
  • Train staff and develop their wine knowledge and service levels.
About You:
  • Certified Sommelier (WSET or equivalent).
  • Experience in a similar role within a comparable venue.
  • Knowledge of wine business management principles and practices.
  • Appetite for teamwork.
  • Excellent organizational and leadership skills.
  • Well-spoken with excellent communication skills.
  • Attention to details and customer needs.
  • Social, engaging, and motivated.
  • Flexibility to respond quickly and positively to a range of work situations.
  • Proof of eligibility to work in the UK.
