Job Title: Pastry Sous Chef

About the Role:
We are seeking an experienced Pastry Sous Chef to join our team at a prestigious 1-Star Michelin restaurant in Central London. As a key member of our pastry department, you will be responsible for leading a team of junior pastry chefs and contributing to the creation of innovative and delicious desserts.

Key Responsibilities:
  • Lead a team of junior pastry chefs and provide guidance and mentorship to ensure high-quality desserts are produced.
  • Develop and implement new pastry recipes and techniques to enhance the restaurant's menu offerings.
  • Collaborate with the head chef and other kitchen staff to ensure seamless service and high standards of quality.
  • Manage inventory and ordering of pastry supplies to maintain optimal stock levels.
  • Ensure all pastry stations are clean and organized, adhering to health and safety standards.

Requirements:
  • Extensive knowledge of chocolate tempering, molding, and crafting chocolate decorations.
  • Proven experience as a Pastry Sous Chef or similar role in a Michelin-starred or high-end restaurant environment.
  • Proficiency in various pastry techniques, including dough preparation, pastry creams, custards, and cakes.
  • Strong leadership skills with the ability to mentor and train junior pastry staff.
  • Exceptional attention to detail and presentation skills, ensuring all pastries and desserts meet high standards of quality and aesthetics.

What We Offer:
  • A competitive salary of £40,000 to £45,000, depending on experience.
  • A desirable shift pattern of 4 days on, 3 days off, with Sundays off.
  • Closed on Christmas Day and Boxing Day.
