Role Overview

We are seeking a highly skilled and experienced Chef de Partie to join our Aether Hospitality Team.

Key Responsibilities
  1. Oversee daily kitchen operations to ensure the highest quality, consistency, and efficiency in food preparation and execution.
  2. Direct and oversee Commis Chefs in the day-to-day operations of the kitchen.
  3. Liaise with suppliers to ensure proper stocks of food and supplies.
  4. Implement and maintain health and safety standards within the kitchen.
  5. Pursue excellence in food quality and presentation.
  6. Prepare, cook, and deliver food according to the agreed menu and Lounge Operating Procedures.
  7. Follow recipes and product directions for food preparation and cooking.
  8. Monitor stock levels and place orders, ensuring correct storage and rotation.
  9. Conduct stock checks, including temperature checks, and complete required documentation.
  10. Work with Commis Chef and Senior Chef to prepare foods for cooking.
  11. Ensure food presentation meets operating standards.
  12. Dispose of waste, including recycling, in the appropriate manner.
  13. Assist in one-to-one training of new staff, including subcontracted supplier staff.
Requirements
  1. NVQ Level 2 Commis Chef or equivalent is desirable.
  2. Proven track record of high-end delivery in hospitality and service sectors.
  3. Similar role experience or working as a Commis Chef, ready for the next step.
  4. Advanced skills and techniques in food production.
  5. Knowledge of food safety legislation and handling/storing product to maintain quality.
  6. Ability to work on own initiative, building beneficial relationships internally and externally.
  7. Demonstrated wide range of food preparation, knife, and cooking skills.
  8. Team player with a first-class approach to customer service, briefing, and coaching team to deliver high-quality dishes and menu items.
  9. Understanding of supply chain management, sustainable procurement, and kitchen working practices.
Additional Information

Flexibility is required with shifts as early starts can be 3.00am and late finishes can be 10.30pm. Aether operates 7 days a week.
