Job Overview

As a key member of the Sodexo team, you will be responsible for leading the culinary operation at Bhurtpore Officers Mess, Tidworth Camp. Your expertise and leadership skills will be essential in managing the food and beverage production team, ensuring high-quality service to our armed forces personnel.

Key Responsibilities:

  • Lead the culinary operation and provide support to the production team
  • Direct the preparation and duties of the sous chef, commis chefs, chef de parties, and other kitchen staff
  • Arrange on and off duties for all staff, ensuring a great work-life balance
  • Ensure strict adherence to EHO guidelines and systems, monitoring sanitation practices to maintain kitchen standards
  • Function menu planning, following a set military dining menu and weekly rotations
  • Improvise and maximize the use of existing stocks where necessary
  • Manage stock, oversee meal presentation, and liaise with the client for requests
  • Work with the FOH management team to drive service excellence
  • Ensure the team is fully trained and refreshed regularly to client and Sodexo standards

Requirements:

  • NVQ level 2/3 or experience working in a busy kitchen environment
  • IT skills, great technical communication, and Microsoft package experience
  • Vast knowledge of food production methods
  • Extensive knowledge of allergens and awareness
  • Impeccable leadership skills
  • Ability to monitor performance and that of colleagues
  • Ability to accept criticism and work well under pressure
  • Ability to organize time and workload
