About the Role

We are seeking an experienced and skilled Executive Chef to lead our hospital catering team at The Royal Free. As a key member of our team, you will be responsible for delivering high-quality, nutritious meals to patients, staff, and visitors.

Key Responsibilities
  1. Menu Development and Service Delivery
  • Develop and implement menus that cater to a variety of dietary needs and preferences.
  • Ensure that all food production, service, and value meet the highest standards.
  • Collaborate with the catering team to ensure seamless service delivery.
Financial and Physical Resource Management
  • Manage the provision of a catering service, ensuring that we are on time, on budget, and setting the example in customer service.
  • Develop and implement cost-effective menu planning and inventory management strategies.
  • Ensure that all food commodities are stored correctly and in accordance with food hygiene standards.
Leadership and Team Management
  • Lead and manage multiple kitchen teams, providing training, coaching, and performance feedback.
  • Develop and implement innovative and patient-centred menus that cater to a variety of dietary needs and preferences.
  • Manage food costs and inventory effectively, minimizing waste and optimizing budget.
Information Resources and Compliance
  • Manage staff rotas, appraisals, and MaST compliance on relevant company computer systems.
  • Ensure that all health and safety policies and procedures are adhered to by all team members.
  • Comply with all legal, regulatory, and hospital policies and procedures.
Requirements
  • BTEC National Diploma in hotel/hospitality, catering, and institutional management or equivalent.
  • Supervisory level experience within a large-scale catering operation.
  • Experience in managing a diverse team.
  • Excellent customer-focused skills.
  • Previous experience managing a food service environment.
