Position Overview:

We are in search of a Lead Sushi Culinary Expert with extensive experience in omakase for a prestigious high-capacity establishment. This role is pivotal in delivering an extraordinary dining experience, particularly emphasizing the chef's table and omakase selections.

  • Location: Edinburgh, Scotland
  • Annual Salary: £55,000
  • Performance Bonus: Up to 10% of annual salary based on performance metrics.
  • Tronc Payments: Eligible for monthly tronc payments, averaging £450 per month.
  • Holidays: 31 days (23 holidays + 8 bank holidays), increasing with tenure.

Primary Responsibilities:

  • Oversee sushi kitchen operations, ensuring exceptional standards and consistency.
  • Design and implement omakase menus that captivate and delight guests.
  • Lead a team of sushi chefs, providing mentorship and maintaining quality assurance.
  • Collaborate with the executive team to innovate and enhance the menu offerings.
  • Encourage teamwork within expanding kitchen teams.
  • Manage inventory, procurement, and cost control for the sushi division.

Candidate Qualifications:

  • Significant experience in sushi preparation and omakase dining.
  • Proven ability to manage high-volume service, particularly during peak periods.
  • Strong leadership and team management capabilities.
  • A minimum of three years in a management role.
  • A positive demeanor and a genuine passion for the hospitality sector.
  • Willingness to relocate or currently residing in proximity.
  • Eligibility to work in the UK.

Compensation and Benefits:

  • Annual Salary: £55,000
  • Performance Bonus: Up to 10% of annual salary based on performance metrics.
  • Tronc Payments: Eligible for monthly tronc payments, averaging £450 per month.
  • Holidays: 31 days (23 holidays + 8 bank holidays), increasing with tenure.
