We are seeking an Assistant Culinary Manager for our charming hotel, specializing in Bar and Bistro cuisine. The successful applicant will demonstrate proficiency and knowledge that will enable them to perform their responsibilities with excellence and efficiency.
Key Responsibilities:
- Mentor junior kitchen personnel in areas such as line cooking, food preparation, and presentation.
- Manage and organize kitchen inventory and ingredients.
- Implement a first-in, first-out system for food rotation, ensuring all products are properly dated and organized for quality assurance.
- Maintain well-stocked cooking stations, particularly during peak service hours.
- Recruit and train new kitchen staff to meet the standards of our establishment.
- Oversee food and product procurement, maintaining detailed records to minimize waste and manage budgetary constraints.
- Supervise all food preparation and presentation to uphold quality and standards.
- Collaborate with the Head Chef to enhance kitchen organization, staff capabilities, and training opportunities.
