Job Summary

We are seeking a highly skilled and experienced Executive Chef to lead our culinary team at Sodexo. As a key member of our operations team, you will be responsible for managing the food and beverage production for our armed forces personnel.

Key Responsibilities
  • Lead the culinary operation and provide support for the production team.
  • Direct the preparation and duties of the sous chef, commis chefs, chef de parties, and other kitchen staff.
  • Arrange on and off duties for all staff and ensure that your team has a great work-life balance.
  • Ensure strict adherence to all EHO guidelines and systems and monitor sanitation practices to ensure that kitchen staff follow standards and regulations.
  • Function menu planning and follow a set military dining menu and weekly rotations.
  • Improvise and maximize the use of existing stocks where necessary.
  • Manage stock, oversee meal presentation, and liaise with the client for requests.
  • Work with the FOH management team to drive service excellence.
  • Ensure your team is fully trained and refreshed regularly to the client/Sodexo's standard.
Requirements
  • NVQ level 2/3 or experience working in a busy kitchen environment.
  • IT skills, great technical communication, and Microsoft packages experience.
  • Vast knowledge of food production methods.
  • Extensive knowledge of allergens and the impact/awareness needed.
  • Impeccable leadership skills.
  • To be thorough and pay attention to detail.
  • The ability to monitor your own performance and that of your colleagues.
  • The ability to accept criticism and work well under pressure.
  • The ability to organize your time and workload.
