The Role:

As our Assistant Culinary Manager, you will play a pivotal role in providing an exquisite dining experience that captivates our members. Collaborating closely with our Head Chef, you will assist in the development of elegant and seasonal menus that highlight both culinary artistry and technical skill. You will also take on a leadership position in the kitchen, ensuring that every dish is prepared to the highest standards and that our culinary benchmarks are consistently achieved.

Key Responsibilities:

  • Work alongside the Head Chef to create and refine fine dining and upscale Brasserie menus that incorporate the latest culinary trends while emphasizing seasonal, locally sourced ingredients.
  • Oversee all facets of kitchen operations, guaranteeing the precise preparation, cooking, and presentation of each dish in line with our fine dining and upscale Brasserie standards.
  • Lead and motivate the kitchen team, fostering an environment of excellence, precision, and collaboration.
  • Maintain the highest standards of food quality, hygiene, and safety, ensuring that every dish not only meets but surpasses the expectations of our members.
  • Manage inventory and procurement processes, ensuring that only the finest ingredients are utilized and that waste is minimized.
  • Innovate and implement new techniques and flavor profiles, ensuring that our culinary offerings remain at the forefront of fine dining and upscale Brasserie.
  • Assist in the training and development of junior kitchen staff, nurturing talent and promoting ongoing learning and improvement.
  • Ensure all dietary needs and member preferences are carefully addressed, providing a personalized dining experience.

About You:

  • Extensive experience as an Assistant Culinary Manager or similar role within a fine dining or upscale Brasserie environment, such as a Michelin-starred establishment or luxury hotel.
  • A profound passion for gastronomy and a dedication to crafting exceptional culinary experiences.
  • Advanced knowledge of both modern and classical cooking techniques, with a keen eye for presentation and detail.
  • Strong leadership and mentoring abilities, capable of inspiring and developing a high-performing kitchen team.
  • A relentless commitment to quality, with the capacity to maintain consistency in a dynamic, high-pressure environment.
  • Excellent organizational and time-management skills.
  • Formal culinary training, with relevant qualifications in fine dining or upscale Brasserie is highly desirable.
