Executive Chef

We are seeking a highly skilled and experienced Executive Chef to lead our culinary team at Sodexo in Bhurtpore Officers Mess, Tidworth Camp, Tidworth, Wiltshire. As a key member of our team, you will be responsible for managing the food and beverage production, ensuring high-quality service to our armed forces personnel.
Key Responsibilities- Lead the culinary operation and provide support to the production team.
- Direct the preparation and duties of the sous chef, commis chefs, chef de parties, and other kitchen staff.
- Arrange on and off duties for all staff, ensuring a great work-life balance.
- Ensure strict adherence to all EHO guidelines and systems, monitoring sanitation practices to maintain high standards.
- Function menu planning, following a set military dining menu and weekly rotations.
- Improvise and maximize the use of existing stocks where necessary.
- Manage stock, oversee meal presentation, and liaise with the client for requests.
- Work with the FOH management team to drive service excellence.
- Ensure the team is fully trained and refreshed regularly to meet client and Sodexo standards.
- NVQ level 2/3 or experience working in a busy kitchen environment.
- IT skills, great technical communication, and Microsoft package experience.
- Vast knowledge of food production methods.
- Extensive knowledge of allergens and awareness.
- Impeccable leadership skills.
- Ability to monitor performance and that of colleagues.
- Ability to accept criticism and work well under pressure.
- Ability to organize time and workload.
