Roka is seeking a highly skilled and experienced Executive Pastry Director to lead the pastry teams across our portfolio of restaurants in London. This exciting role will be responsible for ensuring the high standards of Roka are delivered consistently across all locations.

Key Responsibilities:

  • Oversee daily operations of the pastry sections in all London locations, managing and mentoring the pastry teams to achieve exceptional results.
  • Ensure consistency in quality across all restaurants by implementing and maintaining high standards of food preparation and presentation.
  • Recruit, train, and mentor pastry teams in each location to develop their skills and knowledge.
  • Collaborate closely with the Group Head of Pastry and location head chefs to align pastry offerings and standards across the group.

Requirements:

  • Minimum 2 years of experience as a head pastry chef or senior pastry sous chef in a high-volume restaurant environment.
  • Previous experience in Japanese cuisine is highly desirable.
  • Proven track record of strong and motivational management experience, with the ability to lead and develop high-performing teams.
  • Ability to travel and work flexibly to support the needs of the business.
