Sushi Chef Job Description

At Fundamental Hospitality, we are seeking a highly skilled and experienced Sushi Chef to join our team. As a Sushi Chef, you will be responsible for leading the sushi section and ensuring the highest quality of food is served to our guests.

Key Responsibilities:
  • Supervise and coordinate the activities of cooks and workers engaged in food preparation.
  • Contribute to the development of team talent and maintain a positive work environment.
  • Ensure compliance with established standards and regulations, including food safety and sanitation.
  • Determine production schedules and worker-time requirements to ensure timely delivery of services.
  • Estimate amount and costs and requisition supply and equipment to ensure efficient operation.
  • Monitor sanitation practices and instruct section staff in the preparation, cooking, garnishing, and presentation of food.
  • Update menus regularly, taking into account seasonal availability and guest preferences.
  • Handle section manpower requirements, including hiring and recruitment.
Requirements:
  • Culinary arts degree preferred, or 5+ years of experience as a Sushi (Head) Chef or 10+ years of experience as a line chef with senior role.
  • Food hygiene management qualification or intermediate or higher level food hygiene training.
  • Excellent communication and interpersonal skills, with the ability to work effectively in a team environment.
  • Ability to learn and perform all essential job functions accurately and safely.
  • Knowledge of the menu and beverage list, with the ability to communicate clear suggestions to guests.
Physical Requirements:
  • Able to stand and exert well-paced mobility for an extended period of time.
  • Able to lift up to 25 lbs. and on a regular and continuing basis.
  • Able to bend, stoop, kneel, reach, push, pull, twist, walk, crouch, squat, and stretch to fulfill tasks.
  • Manual dexterity is required to use and operate all necessary equipment.
Working Conditions:

Regular attendance is required, with the ability to work varying schedules to reflect the business needs of the property. Employees must comply with Shanghai Me rules and regulations for the safe and effective operation of the facilities.
