Chef De Partie Job Description

At The Brook Inn - Fisherhook, we are seeking a skilled and dedicated Chef De Partie to join our culinary team. As a key member of our kitchen staff, you will play a vital role in delivering exceptional dining experiences for our guests.

Main Responsibilities:
  • Food Preparation: Assist senior chefs in daily food preparation tasks, ensuring adherence to quality standards and presentation guidelines.
  • Task Coordination: Collaborate with the Sous Chef to coordinate daily tasks and ensure efficient kitchen operations, maintaining a supportive working environment.
  • Production Estimation: Estimate daily production needs and verify the quality of raw and cooked food products, adhering to HACCP regulations.
  • Quality Assurance: Maintain the highest levels of food quality, presentation, and guest satisfaction, ensuring a positive dining experience.
  • Food Safety Compliance: Ensure adherence to all food safety and sanitation procedures, including HACCP regulations, to maintain a safe working environment.
  • Menu Knowledge: Have thorough knowledge of all menu items, including recipes, production methods, and presentation standards.
  • Equipment Maintenance: Operate and maintain kitchen equipment, reporting any defects promptly to ensure optimal performance.
  • Team Communication: Foster effective communication among kitchen staff to maintain a supportive working environment and promote a motivated team.
  • Menu Creation Support: Assist the Sous Chef and Head Chef in menu creation and development, ensuring innovative and appealing dishes.
  • Training and Guidance: Mentor and train junior staff to promote high standards and a motivated team environment, ensuring a smooth transition of knowledge and skills.
  • Quality Control: Regularly assess quality control measures and adhere to service standards, maintaining a high level of quality and consistency.
  • Safety Procedures: Observe all safety protocols and procedures, including conducting fire drills and reporting incidents, to ensure a safe working environment.
Requirements:
  • Experience: Previous experience in a restaurant or hotel kitchen environment, with a strong understanding of food preparation and kitchen operations.
  • Organizational Skills: Strong organizational abilities to manage multiple tasks effectively, prioritizing tasks and meeting deadlines.
  • Team Player: Ability to work collaboratively in a busy team setting, maintaining a positive and supportive attitude.
  • HACCP Knowledge: Full understanding of HACCP principles and food safety standards, ensuring adherence to regulations and guidelines.
  • Flexibility: Willingness to work flexible hours as needed, adapting to changing kitchen demands and priorities.
