About the Role:

We are seeking a highly skilled and experienced Sous Chef to join our team at The Mayflower, a traditional pub with beautiful bedrooms located in the picturesque harbour town of Lymington in the New Forest.

Key Responsibilities:

  • Support the Head Chef in producing high-quality food in line with company food brief.
  • Assume full responsibility for kitchen operations during the absence of the Head Chef, managing duties such as rota management, food safety protocols, and cleaning schedules.
  • Ensure the food service meets and enhances customer expectations, embodying our company values: Set the Bar High, From the Heart, Raise the Spirits, and Make us the Talk of the Town.
  • Assist in maintaining gross profit margins through menu planning, stock control, portion management, and menu pricing.
  • Ensure compliance with health & safety, food safety, and fire safety regulations within the kitchen.
  • Assist in ongoing training and development of kitchen team members.
