Reports to: Head Chef

Note: This job description outlines the key responsibilities and duties of the Senior Sous Chef position. Employees will be required to perform any other job-related duties assigned by their relevant Manager.

Position Overview:

The Senior Sous Chef will be responsible for supporting all areas of the Kitchens, ensuring food served will be of the highest standards, motivating team members to ensure the ultimate guest satisfaction. The Senior Sous Chef will support the Executive Head Chef / Executive Chef to achieve business goals.

General:

The Senior Sous Chef will be responsible for helping to maintain a customer-focused culture which supports the values expressed in the Celtic Collection's Ambition and the business goals of profitability and service quality.

The Senior Sous Chef will establish and maintain effective and positive relationships within the team as well as other departments.

The Senior Sous Chef will comply with the Celtic Collection's Health and Safety, Hygiene policies as well as all other resort policies and procedures.

The Senior Sous Chef will report all situations that may present a danger to guests or staff immediately to the relevant people and take action to rectify the situation if possible.

The Senior Sous Chef will ensure that resources are used effectively, minimizing waste to protect the environment and to reduce costs.

Key Responsibilities:

  • Communication: The Senior Sous Chef will be responsible for communication through effective writing, speaking, and listening skills. The Senior Sous Chef will encourage employees to actively participate in the business through decision-making and ideas.
  • Budgets: The Senior Sous Chef will support the Department Manager in setting monthly, quarterly, and annual budgets.
  • Standards: The Senior Sous Chef will support the setting, maintenance, and understanding of standards expected for the Department and will be responsible for the enforcement of these standards within the operations.
  • Controls: The Senior Sous Chef will support the Department Manager in the setting of controls and will maintain an understanding of the controls in place that monitor performance of the Department.
  • Structure: The Senior Sous Chef will maintain an understanding and respect for the organizational structure and will support the staff within each position as defined in their Job Description.
  • Team: The Senior Sous Chef will be responsible for initiating disciplinary proceedings where team members do not conform to the standards required by the Job Description, Standard Operating Procedures, and Celtic Collection's requirements.
  • Delivery: The Senior Sous Chef will ensure all equipment, tools, and supplies are available and will maintain relationships with the suppliers of the equipment, tools, and supplies.
  • Training: The Senior Sous Chef will be responsible for maintaining and achieving training standards in conjunction with the Executive Head Chef / Executive Chef / Head Chef.
  • Leadership: The Senior Sous Chef will be responsible for the leadership of the team and individuals, including frequent periods of internal/external customer contact to attain feedback on individual and departmental performance.
  • Team Building: The Senior Sous Chef will be responsible for the development of individuals, while promoting the importance of teamwork, contributing to team-building sessions both within and outside the resort.
  • Checking: The Senior Sous Chef will be responsible for gathering information as required by the appropriate controls in place to determine achievement of key performance indicators.
  • Evaluation: The Senior Sous Chef will assist the Executive Head Chef / Executive Chef / Head Chef in compiling periodic reports based on the checking process.
  • Innovation: The Senior Sous Chef will be responsible for taking the results of the evaluation and implementing changes to ensure continuous innovations and improvements are made within the department.
