Job Summary:

The Director of Food and Beverage Operations will be responsible for overseeing the daily operations of the hotel's food and beverage outlets, including the management of staff, inventory, and customer service. This role requires a strong background in hospitality management and experience in banquet operations.

Key Responsibilities:

  • Operations Management: Manage and coordinate daily Front of the House and Heart of the House operations, ensuring seamless execution of events and services.
  • Event Management: Monitor event status, communicate with culinary teams, and ensure timely and accurate delivery of food and beverages.
  • Staff Management: Plan and control manning to meet business needs, work with Talent & Culture to recruit suitable colleagues, and control outsource labor supply, casual labor, and overtime.
  • Quality Control: Ensure regular training and re-training for casual employees, maintain service and function room setup standards, and ensure hygiene and food safety compliance.
  • Financial Management: Implement, monitor, and maintain control measures that impact food costs, beverage costs, labor costs, and operating supply costs.
  • Guest Experience: Lead the F&B team to personalize the guest dining experience, ensure the delivery of Service Promise, and provide immediate attention to guest complaints.
  • Team Development: Provide necessary training and guidance to F&B team members, recruit, develop, and retain competent and confident team members who exceed guest expectations.

Requirements:

  • Degree/Diploma in Hospitality Management
  • 5 years in F&B Management experience with strong background in banquet operations
  • Experience in similar size/style of 5-star hotel
