About the Role

At The Belfry Hotel and Resorts, we operate a 4-day on, 3-day off rota system.

As a Lead Kitchen Team Member, you'll be responsible for setting up and preparing menu items for your designated section. This includes pre-preparing dishes for the week ahead and potentially taking charge of the entire kitchen in the absence of management.

Your Responsibilities
  • Craft delicious meals using fresh, locally sourced ingredients.
  • Demonstrate a thorough understanding of allergen awareness and food safety practices within the kitchen environment.
  • Ensure accurate temperature logging for hot items and refrigerators to maintain full compliance with regulations.
  • Manage your assigned kitchen section efficiently during busy service periods, providing support to your colleagues to guarantee prompt and accurate order fulfillment.
  • Maintain a clean and organized work area by clearing and cleaning your section and other designated areas of the kitchen, adhering to all hygiene standards.
  • Possess a strong understanding of COSHH and HACCP guidelines for food storage and handling.
  • Adhere to portion control guidelines, including accurate weighing and measuring, and meticulously record all wastage to ensure precise GP% calculations.
About You

The ideal candidate will have a minimum of 2 years of experience as a Chef de Partie and possess excellent communication and presentation skills.

  • Passionate about food and working with seasonal ingredients.
  • Dedicated to maintaining high standards with meticulous attention to detail.
  • Experienced in taking ownership of your section and adhering to portion control guidelines, including accurate weighing and measuring, and meticulously recording all wastage for precise GP% calculations.
  • Able to build strong relationships with your team members and colleagues.
