We are an Artisan Bakery located in South East London, founded in 2010 our products are made to the highest quality using the best ingredients. Whilst we are a small bakery we make a large range of breads, pastries and sweet treats. Our plans for the future are big and we have an excellent team working to help us achieve this.

In order to achieve these plans we are looking for an experienced Head of Pastry to join our team. The role of the Head of Pastry is to ensure the pastry department is producing high quality artisanal pastries, strictly following food safety and health and safety practices. The role will ensure the pastry team is well led, motivated and supported in a proactive manner, in line with Bread Bread’s company values.

This is not a full list of duties, and responsibilities can be reasonably added, removed or changed where necessary; the job holder may also be required to complete tasks outside of the job description to support the business objectives and performance.

**Key Responsibilities**:

- Undertake and record daily quality control panels with the Head of Bread and Cake, and the Product Development Manager and action any issues raised
- Rota staff to a labour budget
- Work alongside the Product Development Manager to launch new products and train staff in roll-out
- Oversee trials and onboarding of new staff
- Identify skills gaps and liaise with HR to create development plans and training opportunities
- Stock control, ensuring the department has enough ingredients and equipment
- Implement a batch tracking system
- Have and maintain extensive knowledge and interest of artisan pastry
- A keen desire to connect farm to plate and in sustainable seasonal food
- Prepare and create pastries, including accompanying creams, custards, sauces, etc to company standards, following a recipe
- Support the HR agenda by assisting in matters under the disciplinary and grievance procedures
- Undertake regular performance reviews with the pastry team

**Knowledge, Experience and Attributes**:A keen personal interest in artisanal pastries and extensive professional experience in producing in a wholesale setting. The ability to work to tight deadlines and flexible to changing priorities based on the needs of the business. Able to manage a team and lead them with emphasis on a positive working environment where individuals are held to high standards.

**Salary**: £38,000.00-£42,000.00 per year
