RUSK & RUSK are excited to bring The Spanish Butcher restaurant & bar to the capital in April 2024.
Delivering an authentic Spanish dining experience in the heart of Edinburgh. With a focus on Galician beef, Iberico ham, and exquisite seafood, menus showcase the freshest Spanish flavours and ingredients combined with a Midtown Manhattan design.
THE ROLE: SENIOR SOUS
As the Senior Sous, you will play a crucial role in the growth and success of our newest addition to the RUSK & RUSK collection. You should have a proven track record in high-calibre restaurants, specialising in modern cuisine using exclusively fresh produce. Your responsibilities will include supporting the Head Chef in all tasks, completing necessary paperwork, managing stock control, training, and overseeing junior chefs and ensuring smooth day-to-day operations during service.
The right candidate will have minimum of two years kitchen experience working with high-quality, high-volume venues. The ideal candidate should be passionate about food and enthusiastic about getting to work with the very best produce sourced from the highest standard of suppliers. A creative streak and a want to explore new ideas is essential.
Have a progressive background within a similar quality restaurant environment.
Be a forward-thinking kitchen manager.
Thrive under pressure and excel in busy environments.
Be able to nurture the team and help them achieve their goals.
Great rota and people management skills
Work closely and train junior chefs in the brigade.
