Position: Head Sushi Chef - with Omakase Experience

Location: Edinburgh, Scotland

Annual Salary: £55,000 base

Bonus: Up to 10% of annual salary based on performance metrics.

Tronc Payments:Around £450 per month.

Holidays: 31 days (23 holidays + 8 bank holidays), increasing with tenure.

Start Date: ASAP

Revenue: Up to£70k per week

Covers: Up to 400 per day on weekends


Overview:


We are seeking a highly skilled Head Sushi Chef with substantial omakase experience for a high-volume luxury location in Edinburgh. The role requires a chef capable of delivering an exceptional dining experience, particularly focusing on the chef's table and omakase offerings.


Key Responsibilities:


  • Lead the sushi kitchen operations, ensuring high standards and consistency.

  • Create and execute omakase menus that attract and excite guests.

  • Manage a team of sushi chefs, providing training and maintaining quality control.

  • Collaborate with the executive team to innovate and refine the menu.

  • Fostering teamwork within growing kitchen teams

  • Oversee inventory, ordering, and cost control for the sushi section.


Candidate Requirements:


  • Extensive experience in sushi preparation and omakase dining.

  • Ability to handle high volume service, especially during peak times.

  • Strong leadership and team management skills.

  • At least three years of management experience

  • A positive attitude and genuine passion for the hospitality industry

  • Willingness to relocate to Edinburgh or already based nearby.

  • Right to work in the UK.


Compensation Package:


  • Annual Salary: £55,000

  • Bonus: Up to 10% of annual salary based on performance metrics.

  • Tronc Payments: Eligible for monthly tronc payments, averaging £450 per month.

  • Holidays: 31 days (23 holidays + 8 bank holidays), increasing with tenure.

  • Private Medical Insurance: Available for the employee; dependents can be added at their own cost.

  • Pension: Employer will match contributions up to 6%.
