HEAD CHEF ROLE

This senior role is a hands-on position working in-house.

In this position you will oversee the day-to-day running of the kitchens and be able to manage, lead, motivate and develop the team.

Responsibilities will include menu planning, managing the financial KPI's enabling business success, purchasing, health and safety including food hygiene procedures and kitchen practices.

In this senior role, you will develop fresh seasonal menus for our dining, banquet & wedding menus and introduce new dishes for F&B. In doing so, your duties will include creating and maintaining a budget, assigning tasks to other chefs and ensuring customer satisfactory by expediently dealing with any issues that may arise.

REQUIRMENTS & SKILLS

  • Strong leadership skills to effectively manage an motivate a kitchen team
  • Excellent organisational skills to ensure smooth running of a kitchen.
  • In depth knowledge of all the sections in a kitchen to efficiently manage operations.
  • Business acumen to make sound decisions regarding things like menu prices and kitchen processors.
  • Creativity and superior culinary skills to create dishes and develop menus
  • Process the stamina and ability to fulfil a hands-on position.
  • Up-to-date knowledge of cooking techniques and recipes
  • Remain updated with compliances and kitchen practices, including sanitation regulations to EHO standards.


KEY RESPONSIBILITIES:

Kitchen inventory management to include menu design and planning, stock control, ordering, food safety, budgets, and due diligence.

  • Working harmoniously with management and colleagues within the food and beverages of the company.
  • Interviewing and training staff
  • Implement strategic training.
  • Ensure safety and sanitation practices in the kitchen.
  • Ensure compliance with health & Safety regulations and Food Hygiene with the desire to achieve 5-star rating.
  • Assigning work in all kitchen(s), developing, and preparing meals for our diners.
  • Process a creative flair in developing menus.
  • Monitor food stocks, orders and staff costs.
  • Be accountable for implementing methods to check freshness of foods and out-of-date stock

Satisfactory References

At least two to three years of proven experience as head chef or sous chef or experience in managing a culinary team. In addition, candidates may need to show financial knowledge and a proven ability to run a profitable kitchen.
