Key Accountabilities

  • Restaurant set-up, including but not limited to: performing daily cleaning, cleaning and dusting all tables, chairs and caging, polishing all glassware and cutlery, folding napkins, preparing all rubbish bins for service, etc.
  • Ensure the pass section is clean, organised and stocked with crockery, cutlery, condiments, etc.
  • Assist with stock count, reporting any shortages to the Manager, and at all times, ensuring the restaurant has adequate supplies for the shift, including all crockery, glassware, cutlery, trays, napkins, condiments, etc.
  • Take responsibility for ensuring that all food, crockery, cutlery and condiments which leave the kitchen / pass are to the required standard, and ensure each dish is delivered to the correct table and in a timely manner.
  • Assist in the management of advance of special and group dining menu orders.
  • Maintain and keep the food bible, allergy chart up-to-date.
  • Attain a thorough working knowledge of the restaurant menu products, including safe substitutes of dishes which contain specific allergens.
  • Attend the Managers pre-shift briefings, and ensure preparation of service, including any special or private event according to the blocking sheet.
  • Communicate out of stock or limited stock at the daily staff briefing and during service, managing limited stock on the point of sales system.
  • Act as a communicator between the kitchen and Floor Managers to ensure the smooth and efficient running of food service. Providing assistance to the Chefs when required.
  • Monitor and control breakages on a day to day basis in line with restaurant guidelines.
  • Inform the Manager of all repair and maintenance work required for the point of sales system and printers.
  • Welcome and greet and bid farewell to all guests in a welcoming, friendly and professional manner.
  • Ensure the Commis Waiters are trained and have the necessary tools to carry out their duties.
  • Monitor training within designated division and provide the Managers with feedback on progress to assist in improving performance of the team.
  • Effectively manage the distribution of duties amongst Commis Waiters, and ensure duties are completed in a timely manner and to the required standard.
  • Attend training session and read training notes to continually furthering your skills and knowledge.
