The Role

This is an exciting opportunity to lead our omakase operations, working closely with the Head Chef to deliver unparalleled dining experience.

  • Lead and develop and omakase team, ensuring all dishes meet our high standards of quality and presentation
  • Oversee preparation and execution of omakase experience (Kappo ryori / kaiseki cuisine)
  • Collaborate with the Head Chef to create innovative and seasonal menus
  • Mentor and train junior Chefs, fostering a culture of continuous learning and excellence
  • Engage with guests to provide a personalised and memorable dining experience
  • Manage inventory, order supplies, and ensure the freshness and quality of all ingredients
  • Ensure the smooth running of the sushi and omakase sections, optimising workflow and maintaining a clean and organised kitchen


About You

  • Proven experience as a Senior Omakase Chef within a high-end Japanese restaurant
  • Extensive knowledge of omakase techniques, with a strong understanding of Japanese culinary traditions
  • Demonstrated ability to lead and inspire a team, with excellent communication and interpersonal skills
  • Strong attention to detail, with a commitment to excellence in every dish
  • Passion for creating innovative and visually stunning dishes that elevate the dining experience
  • Comprehensive knowledge of food safety, HACCP, sanitation, and personal hygiene practices
  • Ability to adapt to a fast-paced environment and handle the pressures of a busy kitchen
  • Passion for food, working with high quality ingredients, and hospitality
