ROLE OVERVIEW The role of Chef de Partie at Big Sky Studios requires a professional and passionate chef with proven experience in a similar role. Our CDPS must exhibit a strong desire to learn and grow, both within the business, the role, and the wider industry. Chef de Parties are the cogs of the kitchen, prepping and serving dishes across all menus, from various sections on the line. Pride and passion are therefore fundamental in this role, with a positive, can do attitude when collaborating with and supporting our colleagues and the business to success. Strong health and safety and food hygiene practices are essential, following detailed task lists and processes daily as outlined by line managers. This role is within the catering sector, Monday to Friday 6.30am - 2.30pm, 40 hour contract. Option for additional hours during the week and weekend, if available. All overtime paid. KEY RESPONSIBILITIES Set-up of all required MEP and equipment for the successful operation of allocated section (sauce / larder / prep / pastry) for breakfast and lunch services. Leading the service of allocated section under the supervision of Sous and Head Chef. Preparing ingredients, MEP, recipes and delivering the final product for daily menus, as instructed by line manager, in collaboration with colleagues. Ensure consistency and quality of prep and final product by following Big Sky prep sheets and recipes, under the guidance of line managers. Put effort into optimizing the prep and cooking processes, with attention to speed and efficiency as well as quality. Enforce strict health and hygiene standards, completing

daily

checks including (but not limited to) temperature checks, cleaning, labelling and HACCP paperwork. Monitoring portion control and wastage. Monitoring stock levels and ingredients for allocated sections, requesting orders from line manager to top up where required. Completion of

daily

opening and closing checklists for the allocated sections, with line manager sign off. Support and training of Commis Chefs and Kitchen Porters, when needed and instructed by line manager. Weekly compliance checks and deep cleans. Help to maintain a climate of smooth and friendly cooperation and a positive working environment amongst your team.
