Bocconcino Restaurants are one of the most Luxurious, Authentic Italian Restaurants, nettled in Mayfair and Soho, Central London. We are now looking for our new Head Chef to join our family in Soho.
As Head Chef, you will be responsible for ensuring the delivery of high quality food following our Bocconcino standards; you will play a key role in menu development and you will be responsible for maintaining our health and safety standards in the kitchen.
You will manage the overall kitchen operation, including prep schedules, stock control, budgeting and maintenance, as well as the day to day management of the kitchen team.
You need to have:
- Previous experience as a Head Chef (min 5 years in luxury kitchen environment)
- Excellent attention to detail;
- Leadership skills with the ability to manage, train and motivate the entire team:
- Able to manage staff costs, scheduling and reviewing staff rotas;
- Strengths in finances, purchasing and menu costing;
- A working knowledge of health and safety, compliance and procedures
Role description:
- Develop and innovate seasonal menus that reflect the restaurant's concept. Offer menu changes for the owner to approve.
- Oversee food preparation, cooking, and plating to ensure dishes are executed to perfection.
- Document every step of food preparation and keep it accessible for junior chefs.
- Together with the Restaurant management update the Food Bible
- Be in charge of wastage book
- Lead, motivate, and mentor kitchen staff by providing guidance, training, and performance feedback.
- Be in charge of staff training (incl. induction, new menu changes). Keep training records up to date showing which and what training was provided/signed.
- Be in charge of Kitchen staff grooming standards by explaining the requirements and supervising that all the rules are followed all the time.
- Together with HR plan personnel hiring.
- Plan staff rotas and maintain records and budgets of payroll and attendance
- Maintain inventory levels and order supplies to ensure efficient kitchen operations.
- Ensure adherence to health and safety regulations and sanitation standards at all times.
- Act as the first point of contact during council inspections, ensuring compliance with regulatory requirements and addressing any concerns or issues raised.
- Be in charge of Cleaning schedules and checklists.
- Collaborate with management to develop cost-effective menu offerings that meet budgetary goals.
- Monitor food costs and control expenses to optimise profitability (running monthly checks on supplier pricelists)
- Attend weekly management meetings.
- Foster a positive and collaborative work environment, promoting teamwork and communication.
- Stay updated on industry trends and culinary innovations to continuously improve menu offerings and techniques.
- Handle special dietary requests and accommodate guest preferences as needed.
- Handle any kitchen-related issues or emergencies effectively and professionally.
- Perform other ad hoc duties as required to support the overall success of the restaurant.
