Shield Foods is an independent seafood distributor, specialising in high-quality frozen and fresh produce. **We are currently seeking enthusiastic and motivated individuals to join our dedicated night production team.** Whether working independently or as part of a group, **you’ll play a key role in helping us deliver exceptional seafood to our customers.**
**As a Fish Filleter / Blockman,**your main responsibility will be to cut whole fish into precise fillets, portions, and other specified cuts, ready for next-day dispatch. Working with sharp knives at a filleting block, **you’ll ensure our products remain fresh, safe, and visually appealing.**Adherence to strict food safety and hygiene standards is essential in this role.
**Key duties (not limited to)**:
- Fillet and portion many kinds of fish by hand to customer requirements
- Keep yield high and waste low
- Check freshness and report any problems promptly
- Sharpen knives often and store them safely
- Keep your block clean and follow the cleaning plan
- Follow our food safety, HACCP procedures including temperature checks every shift
- Follow our fish and allergen segregation procedures
- Weigh, label and pass finished cuts to the packing team
- Record and label fish correctly including batch number
- Rotate stock and ensure fish is iced correctly and quality is maintained
- Record yields and waste on the handheld scanner
- Help train new starters on safe knife work
- Work with the team to hit shift targets
- Be able to work in chilled environment (0 - 4 °C) with occasional wet floors
- Be able to manually handle fresh fish and boxed products
- Wear PPE: waterproof jacket/trousers, gloves, hairnet and safety footwear
**What We Need from You**:
**Must‑have**:
- Good knife skills in fish or meat
- Good time‑keeping and can-do attitude
- Able to lift to 20kg and stand in a cool, wet area for long periods
- Willing to follow food‑safety and hygiene rules at all times
- Be able to reliably commute to South Ruislip
**Nice‑to‑have**:
- Past work as a fishmonger, filleter or sushi chef
- Level 2 Food Safety or knife‑skills certificate
- Know basic computer data entry
- Experience with workplace organisation techniques

- **Cleanliness & high personal hygiene** - keep yourself and your work area clean and follow all hygiene rules
- **Flexibility** - swap between fish types, cuts and shift times

**Your Schedule: 9pm - 6am**
**Shield Foods operates on a 5 + 2 rota,**this means that you will work 5 nights one week, and 6 nights the following week.
**Your expected days of work will be: Monday (night) - Friday (night) & Every other Sunday (night), from 9pm - 6am with 1 hour unpaid lunch break.**
**You will therefore get every Saturday off, and**_**every other**_ **Sunday off.**
**Job Types**: Full-time, Permanent
Pay: From £32,000.00 per year
