**Shield Foods (UK) Ltd is a long established ( Est.1990) seafood company, distributing Fresh and Frozen seafood products to restaurants in London and the surrounding counties 6 days a week.**

**NIGHT PRODUCTION ASSISTANT**

As a pivotal member of the Shield Foods processing team, our Day Production Assistants play a crucial role in maintaining the highest standards of quality and precision during production. Your expertise in cleaning, trimming, and filleting fish directly contributes to the excellence of our products, ensuring they meet the expectations of both our customers and industry regulations. This role plays a fundamental part in upholding hygiene standards, optimising the filleting process, and enhancing the overall visual appeal of our seafood products.

**KEY RESPONSIBILITIES -**

**Your duties will include but not limited to**:
**Cleaning and Trimming**

Expertly clean and trim various types of fish to precise specifications, ensuring optimal presentation and quality for further processing.

**Quality Inspection**

Conduct thorough inspections of each fish, identifying defects or abnormalities and taking appropriate actions to maintain high-quality standards.

**Knife Skills**

Utilise a range of hand tools and knives with precision and efficiency in tasks such as filleting, descaling, pinning, and portioning.

**Knife Maintenance**

Ensure the proper cleaning, sharpening, and safe storage of knives to maintain their effectiveness and longevity.

**Work Area Management**

Maintain a clean and organised block and work area, adhering to strict hygiene standards and ensuring a safe and efficient workspace.

**Fish Preparation**

Execute various fish preparation tasks, including but not limited to filleting, descaling, pinning, and portioning, in accordance with industry standards and company specifications.

**Hygiene Standards**

Adhere to and enforce strict hygiene standards by consistently cleaning and sanitising the production area and equipment.

**ADDITIONAL RESPONSIBILITIES**
- **Temperature Control**: Monitor and maintain proper temperature conditions for fish storage and processing.
- **Product Presentation**: Contribute to the overall visual appeal of the products by ensuring consistent and high-quality filleting and presentation.
- **Waste Management**: Effectively manage and minimise waste by optimising the filleting process and adhering to sustainable practices.
- **Collaboration**: Collaborate with colleagues in the production team to streamline processes and enhance overall productivity.
- **Training and Support**: Provide guidance and support to junior staff members, sharing expertise in fish filleting techniques and safety protocols.
- **Stock control/stock checks**:

- **Processing orders (from time to time)**:

- **Maintaining paperwork as per BRC Standards**:

- **Receiving and booking in goods**

**Qualifications**
- Experience in food production environments
- Knowledge of HACCP and food safety standards
- Proficiency in using hand tools and knife skills
- Basic mechanical knowledge for equipment maintenance
- Strong basic math skills for inventory and measurement tasks
- Ability to work efficiently during night shifts in a fast-paced setting

**Schedule**:45 Hours per week.

**pay**:£12.75 per hour.
