**Artisan Sourdough Baker - Naan Bread (Night Shift)**

Location: Tyseley, B11 Birmingham (Please Check your commute for a 10pm start)

**Salary**: £21000 per annum and great benefits

Hours: 10pm-6am
- Overtime available - 40 hours per week

We are a young and quickly growing wholesale bakery located in Birmingham. Currently we specialize in producing deliciously crafted English and French breads - Sourdough, Bloomers, Sandwich Breads; Rolls and other morning goods. Our customers are various retail shops, cafeterias, take-aways and diaries across Midlands. We are expanding our product portfolio to cater the great demand from our customers.

**What we are looking for**:
We are looking for an Artisan Baker having strong baking knowledge and experience in producing Naan products like - Sheermal, Roghni Naan, Afghan Bread, Kalonji Naan, Bhatoora etc. You will help us develop and implement the artisan sourdough naan recipes. You will need to be skilled in both the shaping and baking of different bread naans. You will ensure the night bake of our bread is prepared to the highest standards, following the developed in-house recipes.

**Main Duties**:
Mix and shape a range of high hydration, long fermentation breads - Consistent management of the fermentation process - Oven management and quality control of all products - Manage your time in a focused and productive way - Train junior members of the team - The night baker is also required to pack baked goods for delivery, mix sourdough for day time production, ensure sections are kept clean, tidy and organised and of course adhere to Health and Safety guidelines.
