**My client based in Ashton-under-Lyne is currently looking for a Chef Manager to join their team.**
Successful applicants will be responsible for managing food production, ensuring the quality of meals and the planning and coordination of meal services.
You will be responsible for the main kitchen, and the operational management within Catering services, including staff management and ensuring food is served to the highest possible standard.
All applicants should be double vaccinated, or be open to getting vaccinated.
**Duties will include, but not limited to**:

- Ensure that optimum staffing levels throughout the catering service are maintained at all times
- Ensure staff are trained to a high standard
- To manage and advise on all staff rotas, including annual leave requests and absences to be recorded
- To be involved with all disciplinary and recruitment processes
- Regular appraisals at work, including personal development plans
- To hold regular team meetings to keep open lines of communication throughout the team
- Ensure all staff are kept up to date with relevant training, and changes to legislation
- Departmental decision making and complaints handling
- Provide assurance data detailing compliance in food safety through excellent Hazard Analysis and Critical Control Points (HACCP)
- Maintain financial control of all catering services
- Purchasing of all food and non-food commodities
- Review options for cost improvements, income generation and change of practice ideas
- Ensure that the quality of food meets dietary and nutritional requirements, listing all allergens and liaising with dieticians for final approval
- Effective stock control, following procedures on site and completing relevant paperwork
- Carrying out all planned and unplanned audits, detailing compliance and good practice in hygiene and Health and Safety
- Expert knowledge in food production techniques and procedures, culinary skills, and food trends
- Knowledge in planning and undertaking risk assessments of complex activities

**Qualifications**:

- Professional Chef Qualification e.g. City and Guilds NVQ
- Level 4 Food Hygiene Certificate

**Rate**:£26k-£30k depending on experience
**Hours**: Mon-Fri 8am-5pm
