Our kitchen now seeks a highly motivated individual to take on the role of Head Baker and take our Donut business to the next level.

This is a new and senior role within our small dedicated team and you will have direct responsibility for all bakery production.

We are looking for someone who will be keen to participate in all aspects of our business operation, including: hands on baking; sourcing the best ingredients; to costing; budgeting; recruitment; staff appraisal.

**HEAD BAKER**

**Job Summary**

To lead and inspire a team of bakers producing high quality Donuts.

**Duties and Responsibilities**

To manage and oversee, from start to finish, the production of all baked goods at our kitchen. To include:
**Management**
- Effective team management throughout all sections of the kitchen.
- Weighing out of ingredients for all recipes.
- Mixing of dough.
- Scaling and shaping of doughs.
- Pastry work, including lamination.
**Quality and Health and Safety Control**
- Being fully aware of health and safety policies and procedures. Ensuring company risk assessments are regularly reviewed and updated.
- Maintaining high standards of quality assurance, hygiene and health and safety; ensuring compliance with relevant legislation at all times.
- Looking after equipment.
**Business and Staff Development**
- Promoting the business where appropriate.
- Contributing to the generation of new business.
- Showing initiative and contributing to the development of new products.
- Being flexible and willing to learn new skills in order to work in other areas of baker
**HOURS OF WORK**

This is a full-time post. Minimum 45 hours per week. The hours shall range between 10pm - 11am Wednesday to Sunday. Pay dependent on experience. As the bakery experiences periods of high demand, you will be required to work during festival periods, school holidays and half terms, on a rota basis.

**EXPERIENCE, SKILLS & QUALIFICATIONS**

**Essential requirements**:

- At least two years hands on baking experience in a bakery.
- Experience of managing a team in a busy bakery/kitchen environment.
- An understanding of the physical demands of a bakers role.
**Desirable Requirements**:

- Catering & hospitality qualifications.
- Level 2 food hygiene certificate
