**Technical Assistant.**

Paul Rhodes Bakery is a multiple award-winning bakery that has been baking since 2003. We produce a wide range of handcrafted products including artisanal and classic bread, all-butter vienoisserie, and a beautiful selection of cakes and pastry items, and deliver these every day throughout the London region. We supply directly to over 1000 businesses from famous names such as Dinner by Heston, Fortnum & Mason, Shangri-La Hotels, Young's pubs, Google and OXO Tower, to name a few, as well as to office caterers, local delis, bakeries and cafes and many more.

If you are an experienced Technical Assistant who has worked in the food industry and preferably Bakery then we have a fantastic opportunity at our Greenwich Bakery. As the Technical Assistant in our team you will be working to support the Technical Manager in delivering our required Technical and Quality levels everyday ensuring that our products are made safely to specification while meeting our exacting quality and consistency standards daily and ensuring we are fully compliant with our accreditations.

**About the Role**:
We want our bakery to be the very best and you and your role will be an integral part in this journey with us. The role will involve ensuring high levels of technical standards (well in excess of our SALSA accreditation) throughout the business helping to ensure the Technical function is fully integrated within the business.

**KEY RESPONSIBILITIES**:

- Assist with the implementation and monitoring of all Food Safety, Quality and Hygiene Procedures
- Assisting with preparing the site for external audits and accreditation / EHO visits
- HACCP - checking HACCP related paperwork, training staff on CCP’s / members of site HACCP team
- Assist NPD team with the introduction of new products and associated validation work / new paperwork
- Audit Production Departments & QMS paperwork (GMP, CCP, Hygiene & Fabrication Audits etc.)
- Reporting non-conforming products/processes to relevant Dept Manager, ensuring appropriate action.
- Product & Process audits including forward and backward traceability / Glass & Hard Plastic audits.
- Working closely with all Department Managers and Teams ensuring high standards of operation.
- Assist with increasing knowledge of teams in the completion of records to the required standards.
- Calibration and use of monitoring devices e.g. temperatures probes, scales, scheduled checks.
- Knife Integrity Checks / Issuing new equipment and monitoring department controls/records.
- A microsampling of products and analysis/investigation, carrying out environmental swabbing.
- Complaints - supporting complaint investigations, maintaining records/complaints log, data trending.
- Raw material delivery assessment / Supplier Complaints / working closely with Purchasing dept.
- Support maintenance and updating of QMS documentation & electronic/paper record systems.
- Supporting the monitoring of Pest Control and reporting/liaising on any hygiene/proofing issues.
- Supporting wider food safety projects / Allergen awareness and controls.
- Escalate reporting where appropriate in accordance with site Food Safety and Quality procedures.
- Follow QA Hold procedure - provision of QA hold notices / QA Hold Log and chase actions.
- Support monthly provision of data for KPI’s and progress with Internal Audit Schedules.

**KEY REQUIREMENTS**:

- Minimum 3-year Food manufacturing experience in a similar technical team role.
- Experience in Sites with accreditation such as BRC, Retailer Audits, SALSA.
- Internal Auditing Training & Experience e.g. BRC Internal Audits.
- Level 3 Intermediate Food Hygiene qualification desirable.
- HACCP Level 3 knowledge and experience are desirable.
- Basic Microbiology Knowledge, training would be an advantage.
- Ability to complete/conduct audits, checks and quality analysis.
- Experience in specifications, Labelling would be advantageous.
- Data collection and report writing.
- IT literate - use of Word, Excel, Database systems.
- Strong verbal and written communication skills are a must.
- High levels of accuracy in work with attention to detail and a methodical approach.
