**Our London Bakery**

Our London Bakery is a new exciting start up in an established bakery to cater for a fast growing London e-commerce business and to support with volumes for The Newt in Somerset as and when required. We will focus on amazing quality bakery and pastry products and sometimes the more niche to the market we are targeting. We are always developing new products so that we can offer variety to our customers so you will get the chance to show your talent and passion for amazing baking

**Our Baker**

The role is for an experienced baker who would progress and get into a senior role with experience in all baking categories - yeasted products, bread, a sour dough specialist with artisan background The person will be responsible for producing the e-commerce orders of all the bakery products each day. Responsible for managing a small team of aspiring junior bakers, ordering, and holding enough stock of ingredients and efficient and always forward thinking. To support the Head of Bakery in training and day to day running of the Bakery & also support the pastry team when required. Manage the basic requirements of the direct reports, keep the team aware of health and safety & food safety rules. Update Head of Bakery on daily team issues, product, delivery, ordering. As with any production area, there will be an expectation that areas are kept clean, tidy and hygienic. This will be a very early start to be discussed during the interview.

**Key Responsibilities**
- Planning daily dough batch / mixes as per daily orders
- Manage the team and assign daily tasks.
- Brief the team daily on special events or VIP orders.
- Rotation of the team into different sections within the department.
- Follow SOPs, company guidelines.
- Daily requisition of ingredient orders.
- Maintain the food/bakery stock items.
- Mixing of dough, shape and bake and final check of the bakery items quality before packed.
- Adhere to Food Safety guidelines.
- Adhere to Health & Safety guidelines.
- Report and control waste each day.
- Support in training of the junior team.
- Maintain and check the equipment including chiller, freezer etc.
- Understand and adhere to HACCP plan.
- Report any near mises, fill any accident form and report to the Head of Bakery

**Skills and Experience**
- Master of working with yeasted doughs
- Mixing, shaping dough for early morning breads, croissants. or putting the finishing touches
- Able to communicate with your team members
- Often worked in a fast-paced environment.
- Have a clear manner of communication
- Have an understanding of what are quality baked goods
- Maintained a safe and healthy food preparation environment, worked with high standards and procedures complying with sanitation and legal regulations
- Highly skilled in using approved recipes, following production process standards and use of proper equipment
- Recommend improvements in bakery preparation methods to achieve better products
