Location: Grangetown, Cardiff
Salary: £27,500 - £30,000, dependent on experience, plus healthy tronc (we operate
with a discretionary 10% service charge)
Working hours: 40 hours per week

Matsudai Ramen is seeking an organised, flexible, driven restaurant manager, passionate about exceptional food, outstanding service and creating the best possible experience for our guests and our team.
About Matsudai:
Matsudai Ramen is a 44-seat ramen bar in Grangetown, Cardiff. Wales's first and the UK's most celebrated ramen shop, with a seasonal menu of ramen and small plates, using the best local produce and fine Japanese ingredients. Each year, we invite chefs and creators to collaborate on supper clubs and events, they've included South Wales' own Babhaus, Philadelphia's Neighbourhood Ramen, Fuku, Amsterdam and London's Kenji Morimoto. The restaurant works closely with our sister company, Matsudai at Home, in Taffs Well. Matsudai at Home produces and ships our ramen meal kits to customers all over the UK and supplies the restaurant.
Position overview:
In this leadership role, you'll be responsible for the smooth and sustainable day-to-day running of our busy restaurant, from implementing HACCP to setting the mise en scene. You'll manage and develop our talented team, track our performance and tightly manage our expenditure, whilst maintaining high standards and a professional, collaborative environment.
What we're looking for:
● Experience as a manager or assistant manager in hospitality
● Exceptional organisational skills and attention to detail.
● Strong, clear communication
● Ability to track and report on labour spend and income against forecasts
● A proactive, collaborative approach and a positive, professional attitude.
