Job Summary

We are seeking a skilled and passionate Viennoiserie Chef with at least 4 years of experience to join our new production kitchen as a Head of Department. The ideal candidate will have a solid background in pastry production, with a strong eye for detail, consistency, and creativity. You will be responsible for preparing high-quality pastries that meet our standards and satisfy our loyal and ever growing customer base.

Key Responsibilities

  • Prepare and bake a high volume and range of pastries according to established recipes and production schedules, ensuring quality control across three venues.
  • Monitor inventory of baking ingredients and supplies and report shortages as needed.
  • Ensure cleanliness and organisation of the baking station and equipment in accordance with food safety and hygiene standards.
  • Assist in developing new recipes and seasonal items in collaboration with the Head Baker and Bakery Manager.
  • Maintain consistency in portioning, shaping, and presentation of products.
  • Follow all health and safety guidelines, including allergen handling and HACCP procedures.
  • Lead bakers and pastry chefs during shifts; organise and direct tasks.
  • Provide daily guidance and support to bakers and pastry chefs to foster a productive and professional working environment.

Qualifications & Skills

  • At least 4 years of hands-on experience in a professional bakery or patisserie setting.
  • At least one years experience in a leadership role.
  • Strong foundational knowledge of dough handling, lamination, and pastry techniques.
  • Ability to work early mornings, weekends, and under pressure in a fast-paced environment.
  • Excellent time management, problem solving and organisational skills.
  • High attention to detail and commitment to quality.
  • Team player with great communication skills and a positive attitude.

Working Conditions

  • Standing for extended periods, lifting bags of flour/supplies (up to 25kg).
  • Collaborative team environment with opportunities to grow and learn.

Working Pattern

​Days: Typically 4 days per week (10 hour shifts) on a rotating schedule.

Breaks: Scheduled in line with working hours and in accordance with labor laws.

Flexibility: Occasional adjusted hours during peak seasons, product launches, or special events.
