Availability: Must include weekends and evening service. Sunday evening not needed.

The Role
We're looking for a passionate and ambitious Sous Chef / Junior Sous Chef to join our growing kitchen team. You'll work closely with the Head Chef to deliver our small plates menu, prepare daily specials, and help develop new dishes that reflect the seasons and the Mediterranean coast.
This is a great opportunity for someone who loves creating from scratch, has an eye for detail, and wants to be part of an exciting independent restaurant known for quality, creativity, and community.
Key Responsibilities
- Assist the Head Chef with day-to-day kitchen operations, ensuring smooth service and consistent quality.
- Prepare and cook dishes from fresh, seasonal ingredients to a high standard.
- Develop and execute weekly or seasonal specials that align with the Mediterranean concept.
- Maintain high standards of food safety, hygiene, and kitchen cleanliness.
- Support with stock control, ordering, and waste management.
- Contribute creative ideas for menu evolution and presentation.
- Lead shifts in the Head Chef's absence, supporting junior team members and maintaining calm, efficient service.
- Help foster a positive, respectful, and professional kitchen culture.
What We're Looking For
- Experience as a Junior Sous or strong Chef de Partie looking to step up.
- A passion for Mediterranean flavours and fresh, simple cooking done well.
- Confident working with seasonal produce and adapting to a changing menu.
- Calm under pressure with excellent organisational and time-management skills.
- A good understanding of kitchen safety and HACCP procedures.
- A positive attitude and a genuine love for food and hospitality.
