OMA + AGORA opened last year in the heart of London's thriving Borough Market. Two restaurants in one building, where OMA is inspired by the fishing villages and shores of the Greek isles and further Levant, and AGORA is inspired by the energy of Athens's markets and streets. It is the latest project by dcco.[SMOKESTAK, manteca ].
Both restaurants are driven by a passion for showcasing the best of British produce. We work with the most inspiring, sustainability-driven suppliers throughout every aspect of our operations. And both restaurants are powered by a busy prep kitchen and bakery, whose job it is to ensure we can feed 6,000 people a week to a level of excellence we can be proud of.
We are proud to be an independent business grounded in a purely hospitality background, and we've had a brilliant first year - being awarded a Michelin star, as well as Opening of the Year 2025 [ Great Britain and Northern Ireland ] for OMA, and a Bib Gourmand for AGORA.
About the role.
We are looking for a bar manager to join the team at our Borough Market restaurant. This is a senior role that will oversee the bars at both OMA and AGORA.
This is a primarily operational position within the team, with the view to add your own input into seasonal cocktail menus.
The ideal candidate will have a natural warmth for people and feed off the adrenalin of a busy service. Working alongside a well-established management team, you'll support and lead the bar team in ensuring we are delivering a consistently excellent experience to all our guests.
You'll be a role model for all staff and spearhead what it means to run bars within two dynamic London restaurants. We are looking for someone who is passionate in ensuring our bars are as creative, slick and inspiring as our kitchens. You'll be a critical thinker who is always questioning if we're doing things the best way possible and constantly looking for ways to drive the business forward.
About you.
- Proven and tested experience in bar management: this role requires someone with skills in an equivalent operational position in a bar management setting.
- Leader: Be the figurehead of your team, inspire and train our next generation of hospitality legends.
- Agile decision maker: you see problems before they occur and problem-solve confidently and instinctively.
- Operational skills: you will love following and creating razor sharp systems and processes that maintain order and a high level of organisation across both bars.
- Genuine passion: bring a sense of enthusiasm for our drinks offering, relaying this to customers during service and to our team out of it.
- Team spirit: you will enjoy working within a busy environment, alongside passionate chefs and hospitality leaders.
Role responsibilities.
Team management + leadership:
- Lead our bar team with professionalism and maturity.
- Inspire and train our young team in all aspects of wet-led hospitality, including spirits knowledge, drinks knowledge and service standards.
- Strong soft-skilled approach to management, leading with the intent to nurture positive team spirit and internal culture.
Problem-solving:
- Problem solve as issues arise during service and support the wider team whilst on duty, whilst also being agile and alert to mitigate issues before they set in.
Stock management + process management:
- Manage stock and ordering with a strong idea of reporting and reconciliation.
- Drive and oversee processes and consistently review standard operating procedures for improvements.
Drive sales:
- Have the capacity to review, improve and profitably drive sales within the limits of the brand.
Requirements
- Previous experience in a similar environment.
- Knowledge of working with Lightspeed and MarketMan is preferable but not essential.
- WSET training desirable but not essential.
